The learner can:

    • Define what a cheese is
    • Demonstrate a basic understanding of how cheesemaking has evolved over time
    • Provide three examples of soft, hard and matured cheeses and where they come from
    • Explain the differences between three types of soft, hard and mature cheeses
    • Explain the process behind making three different cheeses of their choice
    • Define cheesemaking terms such as rennet, cheese-cloth, rind, etc
    • Identify at least four different animals whose milk is used in cheesemaking
